Super Breakfast




It’s ideal for breakfast or lunch. It’s super light, super easy to prepare, but most importantly super nutritious. That’s why I call it SUPER!


Ingredients:
Serves 2 
  • 4 eggs
  • 1 tomato
  • a large handful of leafy greens, e.g. salad mix, spinach, shredded iceberg lettuce, lamb lettuce, rocket, etc.
  • 1 ripe avocado
  • a small bunch of spring onions or chives
  • 50 g feta cheese
  • 2 tablespoons flaxseed oil
  • lemon juice, to drizzle
  • ghee butter, for frying

 Preparation:

  1. Put the pan on the heat and melt 1 teaspoon of ghee butter. Fry the eggs and place them on two plates. Sprinkle with finely chopped spring onions or chives.
  2. Peel the avocado and cut it into slices. Cut the tomato into slices as well.
  3. Wash the greens and arrange them on the plate along with the avocado and tomato.
  4. Cut the feta into small cubes and put all over the dish.
  5. Drizzle over the lemon juice and flaxseed oil.
  6. Serve and enjoy!
