Oats Porridge

The oats porridge is the perfect start of a day. It’s the best breakfast option I can think of. It’s light but filling and it’s quick, simple and nutritious – it will give you the energy you need to survive even the worst and the dullest mornings.

The idea to cook your porridge using water instead of milk may not be what you are used to, but I assure you that it is the reason it tastes so special. Allergies or dairy and lactose intolerance may be other reasons why you may wish to swap milk for water.

On a last note, the addition of goji berries and chia seeds is optional, but again they are highly nutritious and this porridge may be an excellent idea how to introduce them to your diet.

Ingredients:
Serves 2

  • 1 and 3/4 cups wholegrain rolled oats (choose gluten free oats if you are on a gluten free diet)
  • 3 cups of water (you can adjust the amount of water depending if you like your porridge thin or thick)
  • 1 tablespoon raisins, goji berries and chia seeds
  • 2 ripe bananas
  • 2 tablespoons raw honey
  • 2 tablespoons cold pressed flaxseed oil

Preparation:
  1. Put the oats in a pot and cover with water. Add raisins, goji berries and chia seeds.
  2. Place the pot on the hob and bring to the boil. Cook for about 5-7 minutes stirring occasionally.
  3. Remove from the heat and let it cool for about 5 minutes.
  4. Divide the porridge between your bowls and add one finely sliced banana and one tablespoon of honey and oil per one bowl of porridge.
  5. Stir and enjoy!
