Barley Groats Soup


This is a perfect recipe if you suddenly realise you've run out of vegetables and don't feel like going shopping, even for groceries. Still, you need some carrots, potatoes and onions here. These are, however, the three veggies that I always have stocked up in my cupboard.


Ingredients:
  • 5-6 carrots
  • 4 potatoes
  • 1 onion
  • 3/4 cup barley groats
  • a bunch of dill and parsley, tied with a piece of thread
  • 5 bay leaves
  • 6 allspice grains
  • salt, pepper and herb salt, to taste
  • 3 tablespoons olive oil
  • 2 tablespoons natural yoghurt
  • ghee butter, for frying

Preparation:

  1. Peel and wash the carrots and potatoes. Cut them into small cubes, place in a medium pot, add the herbs, salt and pepper, cover with water and bring to the boil. Simmer for about 30 minutes.
  2. Rinse the barley groats and add to the pot.
  3. Meanwhile, peel and chop the onion very finely. Fry with a little bit of ghee butter until soft and lightly brown. Add to the pot.
  4. When the vegetables and barley groats have cooked, season the soup to perfection with herb salt, salt and pepper.
  5. When it has slightly cooled (but still very warm), stir in the yoghurt and olive oil.
  6. Serve and enjoy :)
