All you need is just a couple of ingredients to make this frittata appear on your table in minutes.
Ingredients:
- 4 eggs
- a splash of milk
- 1 heaped tablespoon mascarpone
- 2 handfuls of spinach, washed
- 1-2 handfuls of cherry tomatoes, cut in halves
- 125 g mozzarella
- 1 tablespoon basil
- salt and pepper, to taste
Preparation:
- In a mixing bowl, whisk up the eggs, and then add the milk and mascarpone ensuring the ingredients combine well.
- Place a pan on a medium heat, add a little bit of ghee butter and pour the egg mixture. Scatter the spinach and the tomatoes on top. Sprinkle with some dried basil and fry for 2 minutes.
- Chop the mozzarella, scatter on top and place the pan in a pre-heated oven (180°C). Bake for about 10-15 minutes.
- Serve immediately. Enjoy :)
