Spinach, Cherry Tomato and Mozzarella Frittata












All you need is just a couple of ingredients to make this frittata appear on your table in minutes.

Ingredients:

  • 4 eggs
  • a splash of milk
  • 1 heaped tablespoon mascarpone
  • 2 handfuls of spinach, washed
  • 1-2 handfuls of cherry tomatoes, cut in halves
  • 125 g mozzarella
  • 1 tablespoon basil
  • salt and pepper, to taste

Preparation:

  1. In a mixing bowl, whisk up the eggs, and then add the milk and mascarpone ensuring the ingredients combine well.
  2. Place a pan on a medium heat, add a little bit of ghee butter and pour the egg mixture.  Scatter the spinach and the tomatoes on top. Sprinkle with some dried basil and fry for 2 minutes. 
  3. Chop the mozzarella, scatter on top and place the pan in a pre-heated oven (180°C). Bake for about 10-15 minutes.
  4. Serve immediately. Enjoy :)
