Get in a festive mood with this delicious gingerbread cake :)
Ingredients:
- 1 3/4 cup spelt flour
- 125 g unsalted butter
- 0,5 cup molasses or brown demerara sugar
- 2 tablespoons raw honey
- 3 eggs
- 5 tablespoons double cream
- 1 1/2 tablespoons raw cacao powder
- 1 1/2 tablespoons mixed spice
- 1 1/2 teaspoon bicarbonate of soda
For the frosting:
- 60 g dark chocolate
- 1 heaped tablespoon unsalted butter
Preparation:
- Sift the flour, cacao, mixed spice and bicarbonate of soda in a medium bowl.
- In a separate bowl mix together the butter, egg yolks, sugar and honey. Add the cream and mix. Add the sifted flour mixture and mix again.
- In another bowl, whisk the egg whites with a pinch of salt. Then, very slowly and gently stir them in the cake mixture.
- Spoon the mixture into a 10x25 cm tin lined with baking paper. Bake in a pre-heated oven at 180°C for 1 hour. Cool in the oven with the door slightly open.
- To prepare the frosting put the butter and chocolate in a small saucepan. Take a bigger saucepan and fill it with water. Place the smaller saucepan with the frosting ingredients in the saucepan filled with water and place on a low heat. Stir frequently until the ingredients have melted and the frosting is runny and smooth. Pour over the cake.
