Green Broccoli Salad



This salad is so satisfying that I don't need anything else on my plate (if I have it for breakfast) or in my lunchbox (if I pack it up for work). 

Speedy, tasty and supergreen - it will boost your energy levels. Leave out the yoghurt to make a vegan version. 

Ingredients:

  • 1 broccoli
  • 1 celery stick, cut into small cubes
  • 1/2 a cucumber
  • 1/2 head of curly or round lettuce
  • 2 tablespoons pumpkin seeds

For the dressing:

  • 1 avocado
  • 2 tablespoons natural yoghurt
  • 3 tablespoons lemon juice
  • a handful of dill
  • 1 teaspoon mustard
  • salt and pepper, to taste


Preparation:

  1. Divide the broccoli into small florets, wash and cook in lightly salted water or steam.
  2. Wash all the remaining vegetables and cut into 1 cm cubes. Tear the leaves of the lettuce.
  3. Toast the pumpkin seeds in a frying pan. Place all the salad ingredients into a bowl.
  4. Peel and deseed the avocado and put in a blender. Add the rest of the dressing ingredients and blend until the mixture is creamy and smooth. Pour over the vegetables and sprinkle the pumpkin seeds on top.
  5. Serve and enjoy :)
