This salad is so satisfying that I don't need anything else on my plate (if I have it for breakfast) or in my lunchbox (if I pack it up for work).
Speedy, tasty and supergreen - it will boost your energy levels. Leave out the yoghurt to make a vegan version.
Ingredients:
- 1 broccoli
- 1 celery stick, cut into small cubes
- 1/2 a cucumber
- 1/2 head of curly or round lettuce
- 2 tablespoons pumpkin seeds
For the dressing:
- 1 avocado
- 2 tablespoons natural yoghurt
- 3 tablespoons lemon juice
- a handful of dill
- 1 teaspoon mustard
- salt and pepper, to taste
Preparation:
- Divide the broccoli into small florets, wash and cook in lightly salted water or steam.
- Wash all the remaining vegetables and cut into 1 cm cubes. Tear the leaves of the lettuce.
- Toast the pumpkin seeds in a frying pan. Place all the salad ingredients into a bowl.
- Peel and deseed the avocado and put in a blender. Add the rest of the dressing ingredients and blend until the mixture is creamy and smooth. Pour over the vegetables and sprinkle the pumpkin seeds on top.
- Serve and enjoy :)
