Chicory Salmon Boats


These will make a great accompaniment to fried or poached eggs. Or impress your guests by serving them as a side or salad.

I don't use extra salt here as to me the smoked salmon is salty enough to bring the flavour to this dish. However, you may wish to use a bit more salt according to your preferences.

Ingredients:

  • 1 medium chicory
  • 1 tomato, diced
  • 1/3 a red pepper, diced
  • 1 tablespoon black olives, finally chopped
  • 150 g smoked salmon, finely cut
  • 3 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chopped parsley
  • pepper, to taste

Preparation:

  1. In a bowl, mix the tomato, pepper, olives, salmon, parsley, olive oil and lemon juice. Season with pepper, and optionally with salt.
  2. Pull apart the chicory and top with a spoonful of the salmon mixture.
  3. Arrange the boats on a plate and serve. Enjoy :)
