These will make a great accompaniment to fried or poached eggs. Or impress your guests by serving them as a side or salad.
I don't use extra salt here as to me the smoked salmon is salty enough to bring the flavour to this dish. However, you may wish to use a bit more salt according to your preferences.
Ingredients:
- 1 medium chicory
- 1 tomato, diced
- 1/3 a red pepper, diced
- 1 tablespoon black olives, finally chopped
- 150 g smoked salmon, finely cut
- 3 tablespoons lemon juice
- 2 tablespoons extra virgin olive oil
- 1 tablespoon chopped parsley
- pepper, to taste
Preparation:
- In a bowl, mix the tomato, pepper, olives, salmon, parsley, olive oil and lemon juice. Season with pepper, and optionally with salt.
- Pull apart the chicory and top with a spoonful of the salmon mixture.
- Arrange the boats on a plate and serve. Enjoy :)
