This is a healthy version of the famous chocolate brownies. And you know what? They are delicious.
I don't think you could ever tell there is millet in there, unless you know it. The texture is moist and dense but light at the same time.
Using the finest and natural ingredients means these brownies are good for you so don't blame yourself for eating more than you should.
Ingredients:
- 1/2 cup millet
- 1 cup water
- 3 eggs
- 50 ml coconut oil
- 1/2 cup molasses
- 1/2 cup raw cacao powder
- 2 heaped tablespoons cashew pulp (use leftover from making cashew milk)
- 1/4 cup cashew milk
- 1 teaspoon baking powder, gluten-free if you wish
- a pinch of salt
Preparation:
- Boil the water in a medium saucepan, add a pinch of salt and cook the millet. Cool aside.
- Blend the millet in a blender or food processor until the consistency is creamy.
- Add the remaining ingredients and mix until they have combined well.
- Scoop into a 20x30 cm baking tray lined with baking paper and bake in a pre-heated oven at 180 º C for 3-40 minutes.
- Cool on the rack, cut into equal squares, serve and enjoy :)
