Time for some comfort food here! After yesterday's dinner disaster, I'm turning to my all time's favourites.
Cook a large batch of this as you'll find yourself eating this more than once. Just like me. Enjoy :)
Ingredients:
- 500 g organic beef mince
- 5 medium carrots
- 2 red onions
- 2 white onions
- 6 cloves of garlic
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 200 ml tomato passata
- 1 can chopped tomatoes
- 2 tablespoons paprika powder
- 1 tablespoon ground cumin
- 0,5-1 teaspoon chilli powder
- 1 tablespoon basil
- 1 teaspoon oregano
- 3 tablespoons lemon juice
- salt and pepper, to taste
- coconut oil, for frying
Preparation:
- Melt 1 teaspoon of coconut oil in a large frying pan or skillet and add finely diced carrots. Sizzle for about 10 minutes.
- Add the meat mince, onions, pressed garlic, passata, chopped tomatoes and spices. Top up with a little bit of water if needed and cook for 20 minutes. Then, add the peppers cut into medium-size pieces and cook for another 30 minutes or until the vegetables and meat are cooked.
- Season to perfection with salt and pepper, or add more spices if you wish.
- Serve with cauliflower rice for a Paleo meal, or traditionally with rice. Enjoy :)
