Greek Salad


Looking at my blog recipes you can tell two things: I am a soup lover and I am a salad lover. I sometimes think I could live on these forever.
This salad represents everything I love about veg combinations: greenness, freshness, vivid colours, vinaigrette, herbs... Simplicity and lightness.

Ingredients:

  • 2 handfuls of rocket leaves
  • 2 handfuls of curly lettuce, or any other lettuce leaves
  • 2 handfuls of cherry or plum tomatoes, cut in halves
  • 1 handful black olives, cut in halves
  • 100 g feta, cubed

For the dressing:

  • juice of 1/2 lemon
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • salt and pepper, to taste

Preparation:

  1. Place all the vegetables in a large mixing bowl.
  2. In a separate bowl, mix all the dressing ingredients and pour over the salad.
  3. Done. Enjoy :)
