Homemade pesto is so much better than the one you buy in store. First of all, it's ready in seconds; all you need to do is to place all the ingredients in a blender or food processor and whizz until it's creamy and smooth. Secondly, it's unprocessed and that's why it's full of vitamins, minerals and essential oils (healthy oils!). Thirdly, its supergreen colour really makes your mouth water; and the freshness and tangy flavour are worth that effortless hustle. Finally, it's so versatile that I'm happy to keep a jar handy in my fridge at all times.
Ingredients:
- 150 g kale, washed
- 100 g pine nuts
- 2 cloves of garlic
- 200 ml olive oil
- juice of 1 lime or lemon
- 1/2 teaspoon salt, or more to taste
- pepper, to taste
Preparation:
Place all the ingredients in a food processor or blender and whizz until the mixture is creamy and smooth.
Put in a glass jar and refrigerate for up to a week or place in a freezer for up to 1 month.
