Turnip and Cauliflower Soup











I have to admit that's my first attempt to cook turnips. Having received them in my weekly veg box, I had to think of what to do with them. And to my mind the soup became the best possible option. 
To my surprise, it came out really tasty. Creamy, smooth, full of flavour... And those bits of leftover roasted meat make a really great accompaniment. 

Ingredients:

  • 6 small turnips
  • 1 onion
  • 1 cauliflower
  • 1 parsnip
  • 3 tablespoons lime or lemon juice
  • 3 bay leaves
  • a pinch of nutmeg, turmeric and chilli powder
  • salt, herb salt, and pepper, to taste
  • some leftover roasted turkey or chicken (optional)
  • ghee butter, for frying
  • olive oil, for drizzling

Preparation:

  1. Melt 1 tablespoon of ghee butter in a skillet or heavy pan. Add the turnips, onion and parsnip, all peeled and roughly chopped. Sprinkle generously with salt, herb salt and pepper and brown all over.
  2. Add the roughly cut cauliflower, bay leaves and spices and cover with water. Simmer on a low heat until the veggies are cooked, for about 30 minutes.
  3. Discard the bay leaves and place everything in a blender (you may do this in batches depending how much capacity your blender has) and mix until the texture is creamy and smooth.
  4. Pour into a medium pot and top up with water so the mixture is runny but thick. Bring to the boil and simmer for about 10 minutes. Season to perfection with salt, pepper and lime juice.
  5. Serve with some finely chopped turkey or chicken meat sprinkled on top and a drizzle of olive oil. Enjoy :)
