I've seen various recipes and images of the kale chips floating around different blogs and websites. Ha, I've even got a recipe in my Paleo book. But, I never thought of making them, not until today.
To my surprise, I've nearly eaten the whole portion and this only means one thing - they really work! They're crispy, flavoursome, light and speedy to prepare, but most importantly they're super healthy.
So, excuse me, but I'm gonna finish them off.... ;)
Ingredients:
- 6-8 kale leaves
- 2 tablespoons olive oil
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon salt
Preparation:
- Preheat the oven to 180-190º C.
- Wash the kale and dry using a kitchen towel. Tear or cut the leaves into small pieces, remove the harder stems.
- Place the kale in a large bowl with the olive oil and apple cider vinegar. Toss and rub the leaves to make sure they are coated well.
- Place on a baking tray lined with baking paper and sprinkle with salt.
- Bake for about 5 minutes, then turn the kale pieces over and bake for another 6-8 minutes.
- Keep checking as smaller pieces cook quicker and may need to be removed from the oven sooner. The kale may burn easily too.
- Serve and enjoy :)
