I've already mentioned St. Hildegard in one the posts; she was a German abbess and philosopher who lived in the XII century. But, she had many more qualities and gifts.
Having read about her life, I was really amazed to discover that she was also a prophet who experienced visions and claimed all her knowledge came directly from God. As a physiscian, poet, writer and moralist she exercised considerable influence over her society including such people as priests and bishops.
This recipe has been inspired by her teachings and comes from the book entitled 'From St. Hildegard's Kitchen' by J. Fournier-Rosset. Although I have slighlty modified it by substituting spelt flour for buckwheat and oats, the cookies still reflect St. Hildegard's culinary views as she ragarded oats as an excellent grain which brings joy.
She claimed those cookies change the mood bringing back the smile, "enrich the blood and fortify the nerves". They shall lead to happiness and joy.
They certainly make me happy :)
Ingredients:
- 1,5 cup + 2 heaped tablespoons buckwheat flour
- 1 cup oats
- 4 egg yolks
- 170 g unsalted butter, melted
- 1/2 teaspoon salt
- 1/2 cup brown demerara sugar
- 1 heaped tablespoon raw honey
- 1 tablespoon nutmeg
- 1 tablespoon cinnamon
- 1 teaspoon cloves
Preparation:
- Put the flour and oats into a mixer bowl. Add the yolks, sugar, honey, melted butter, salt and spices and mix gently until the ingredients have combined well and the mixture is smooth.
- Wrap the cookie dough in cling film and refrigerate for at least one hour.
- Next, remove from refrigerator and roll out onto a lighlty floured surface.
- Cut with a cookie cutter or glass.
- Place the cookies on a large baking tray lined with baking paper and bake at 190°C for 10-15 minutes until they are golden.
- Cool on a counter. Enjoy :)
