I've called this salad 'Vitamin Bomb' because that's what it represents; each and every single ingredient is a natural source of vitamins and minerals. Quinoa + loads of vegetables + healthy oils - doesn't it sound promising? I've decided to add a little bit of feta cause that's a prefect way to pimp a salad.
This comination is perfect for breakfast, lunch or dinner. Great as a lunchbox option or food on the go.
Ingredients:
- 1 cup quinoa
- 2 tomatoes
- 1 large carrot
- 1 red onion
- 2 large handfuls of greens, e.g. rocket, watercress, spinach, lamb lettuce, etc.
- 2 handfuls sunflower seeds
- 2 handfuls pumpkin seeds
- 1 handful sesame seeds
- 100 g feta, cubed (optional)
- 1/2 teaspoon turmeric
- 3 tablespoons extra virgin olive oil
- 2 tablespoon flaxseed oil
- juice of 1/2 lemon
- pepper, to taste
- Rinse the quinoa and cook in lightly salted water with turmeric. Let it cool aside.
- Meanwhile, peel and slice the carrot. Stir-fry with a little bit of ghee butter. Add the finely sliced onion and fry until the veggies have softened and browned.
- Use another pan to toast the seeds until lightly brown.
- Dice the tomato. Wash the greens.
- In a separate bowl, mix the oils and the lemon juice.
- Finally, mix the quinoa with all the vegetables and seeds in a large bowl. Add the feta and pour over the oil dressing.
- Serve and enjoy :)
